Citrus Spinach Salad

Ingredients:
3–4 cups baby spinach, washed and chopped
1–2 seedless oranges, peeled and chopped (or segmented)
1/4 cup pecans, lightly crushed
1–2 tablespoons extra virgin olive oil
Salt, to taste
Black pepper, to taste
1 tablespoon lime juice (adjust to taste)
1–2 teaspoons Dijon mustard
Instructions:
Prep the Ingredients:
Wash and chop the baby spinach.
Peel and chop (or segment) the oranges.
Lightly crush the pecans.
Make the Dressing:
In a small bowl, whisk together extra virgin olive oil, Dijon mustard, lime juice, salt, and black pepper until smooth.
Combine the Salad:
Add spinach, oranges, and crushed pecans to a mixing bowl.
Toss and Serve:
Pour the dressing over the salad and toss gently until well coated.
Serve immediately for the freshest flavor.
Serving Suggestions:
Serve as a refreshing side salad alongside rice, pasta, or protein-based meals.
Turn it into a full meal by adding your choice of grilled meat such as grilled chicken, shrimp, salmon, or steak.
For extra texture, you can also sprinkle more crushed pecans or add feta cheese on top.
