Citrus Spinach Salad

Ingredients:

  • 3–4 cups baby spinach, washed and chopped

  • 1–2 seedless oranges, peeled and chopped (or segmented)

  • 1/4 cup pecans, lightly crushed

  • 1–2 tablespoons extra virgin olive oil

  • Salt, to taste

  • Black pepper, to taste

  • 1 tablespoon lime juice (adjust to taste)

  • 1–2 teaspoons Dijon mustard

Instructions:

  • Prep the Ingredients:

    • Wash and chop the baby spinach.

    • Peel and chop (or segment) the oranges.

    • Lightly crush the pecans.

  • Make the Dressing:

    • In a small bowl, whisk together extra virgin olive oil, Dijon mustard, lime juice, salt, and black pepper until smooth.

  • Combine the Salad:

    • Add spinach, oranges, and crushed pecans to a mixing bowl.

  • Toss and Serve:

    • Pour the dressing over the salad and toss gently until well coated.

    • Serve immediately for the freshest flavor.

Serving Suggestions:

  • Serve as a refreshing side salad alongside rice, pasta, or protein-based meals.

  • Turn it into a full meal by adding your choice of grilled meat such as grilled chicken, shrimp, salmon, or steak.

  • For extra texture, you can also sprinkle more crushed pecans or add feta cheese on top.
